We are taking orders for whole, 1/2 or 1/4's of beef. If you choose a 1/4 you will get all cuts. The processor divides evenly. $3.75 lb. hanging weight, includes processing.
Goat Facts:
It's delicious! Nutrition wise, goat meat is a wonder. A similarly sized serving has a third fewer calories than beef, a quarter fewer than chicken and much less fat. Interestingly, more and more goat meat is being consumed in the United States. The health-conscious consumer is also looking at the benefits of incorporating either Cabrito (a delicacy meat from goats that are harvested between 3-5 months of age and weigh 50-60 lbs. live weight) or Chevon (goats that are harvested between 6-12 months of age and weigh 65-75 lbs. live weight). Goat meat has about the same amount of protein as chicken breast and more iron than beef. With these benefits it is clear why consumers are developing an interest in eating goat meat. It does require low heat, slow cooking to preserve tenderness and moisture. The best ways to cook goat are roasting or braising. Roasting can be done in the oven, in a smoker, or on the grill. Braising involves cooking it with added liquid such as water, wine or milk. Marinating will help retain moisture and tenderness as well.
